Summer Spaghetti

Here’s a healthy (and yummy!) twist to usual pasta for your next spaghetti night. We love this recipe because it’s loaded with fiber-packed veggies and delivers high quality protein, thanks to KABRITA’s non-GMO Whole Goat Milk Powder. It works great as a main or pasta salad side-dish if you’re hosting (or attending) a summer BBQ.

The combination of fiber and protein in this meal will help to keep you and your family full and very happily satisfied.  Plus, protein helps your kids build strong bones and muscles for all those summer time sports and activities!

Ingredients:

Yields 4 servings.

1 Tbsps. olive oil

3 cloves minced garlic

1 red bell pepper, cleaned and cut into strips

½ pound thin asparagus, trimmed and cut into 2-inch pieces

1 cup of button mushrooms, sliced

1 cup of cherry tomatoes, sliced in half

1 cup low-sodium chicken stock

1 cup of water

4 Tbsps. of KABRITA non-GMO Whole Goat Milk Powder

1 Tbsp. all-purpose flour, dissolved in 3 Tbsps. of water

½ tsp. salt

½ tsp. ground black pepper

1 large carrot, peeled and sliced into strips, about 2 cups

¾ pound of whole-wheat spaghetti

¼ cup shredded basil leaves, for garnish

Directions:

  1. Heat the oil in a large saucepan over medium-high heat. Cook garlic until soft, about 1 minute. Add peppers and cook until they begin to soften, about 3 minutes. Add mushrooms, asparagus and tomatoes and cook until soft, about 5 minutes.  Stir in flour and cook for 1 minute.  Add chicken stock, water, KABRITA non-GMO Goat Milk Powder, salt and pepper and bring to a boil. Reduce to a simmer and cook until liquid has thickened slightly, about 5 minutes. Stir in carrot strips.
  2. Meanwhile, cook pasta according to package directions. Drain when done, reserving ½ cup of pasta water.  Toss pasta with vegetables and sauce. Garnish with basil, serve and enjoy!
